You can do with pretty much any camera BUT the less the camera is capable the more YOU need to compensate. The movies you seen done with mobile phones have extremly good skills! But sure it can be done, i do it all the time.

Use a jumpcut! There is always somebody who won't watch it but since that is always the case. What i imagine most people being against is the fact that it's REALLY hard to do a GOOD one. But if you think you can pull it off at least try since that is how you learn!

Don't go for the Galaxy S2! It's awesome and all that and I do all my videos with it but the auto focus is terrible it pulls focus for no reason at all sometimes which can destroy a whole shot. If you have the option sometime get it as a phone and you have a secondary camera!
