Developing a Shot List, With a Catch

I'm almost done with the screen play, and am about to start with story boarding and shot lists.

Here's the catch, in order to help show the passage of months, the lead has agreed to grow out his beard. (he should have 2 months worth of growth when we start shooting)

My plan is to shoot in reverse order and trim the beard as we go. However, there are plenty of situations that can be shot with the same setup.

How can I maximize my use of sets and time, and still be able to use the beard?

For example: A and B are playing chess in scene 1 where he's clean shaven. They are playing chess again in scene 5 but B has a full beard.
