AGC on the T3i- How to get rid of it?

So I've read online that the T3i has manual control over audio levels, allowing the user to get rid of the AGC that makes a hissing noise when nothing is clamping that audio down. (So when it's silent in the scene). Now when I bring the manual levels down on my T3i, all that happens is my audio gets low volume, and the hiss just lessens a bit. I'm using the Rode VideoMic. Is there a way to effectively use my Rode VideoMic with this camera without hiss, or am I going to need to start syncing audio in post, and recording the VideoMic to a separate recorder? (I was thinking the Zoom H1)

Thanks SO much for any help anyone can give on this, I'm very confused.
 
Something I do to reduce my audio hiss is use the Fiio E5 or E3. Here is a comparison video I made up.
