I would look at used HDV cameras. There's a good amount for sale and you can get by with a moderately powered computer to edit.

See if there's anything useful in >> here <<

Also, try contacting the university and simply ask if there's a camera recommendation list for their courses.
You may even have to find out from a specific instructor or ask students.
