I wonder if anyone can help me figure out why the exposure seemed to be changing on the z1p when shooting but the iris and shutter did not change. Everytime the lighting changed the camera would somehow adjust.

You most likely have the camera in automatic exposure mode, I'm not familiar with this camera but it should tell you in the instruction how to change to manual exposure if indeed this is the problem.

If the iris and shutter aren't changing, try looking for "auto gain" or something similar and turning it off.
