This is probably stupid, but, is there software/synthesizer, where I could hum into a mic, a melody, and it would process and generate a musical track?

I don't remember the name, but there used to be a piece of software that would translate a mono audio signal into a MIDI track. From there you could manipulate the MIDI file at will. It worked pretty well with Band-In-A-Box.
