Depending on the camera, you can go straight to the audio inputs.

I recommend that you get several different lengths of XLR cable.

1 - 50'
...and a really nice set of headphones.
 
We actually found an adapter that goes from XLR to 1/8 stereo and are gunna do a quick test using the camera's own mic input level control to see how that sounds. What's your hypothesis?
 
Is the adapter active (powered) or passive? If it is passive, you won't gain anything and if the mic needs phantom power you'll need to power the mic with a battery (if it has that option), or it won't work.

If the adapter is active and provides phantom power (or the mic doesn't need it), it should work fine.
